Potato and Leek Soup – Hearty, Healthy, and an Irish Classic

Happy St. Patrick’s Day! Did you know that this day has been celebrated with a parade in Montreal, Canada, since 1824? It’s been celebrated in the United States since even before the American Revolution. In Buenos Aires, Argentina, it’s celebrated with parties in the streets throughout the night. Potato and Leek Soup is an Irish classic, full of hearty goodness and quick and easy to make. You could serve it as a first course for brunch, lunch, or dinner. Jolinda Hackett at vegetarian.about.com made the soup even healthier by substituting margarine and vegetable broth for cream and butter. Jolinda has been vegetarian for eighteen years and vegan for eight years. Her goal is “to arm you with all the resources, information and inspiration you need to make the transition (to vegetarian or vegan) and stick with it.” Here’s what she has to say about her Irish potato and leek soup recipe.

“Leeks add a surprising amount of flavor when added to soup, and this is a simple yet traditional soup recipe for making Irish leek and potato soup. For a heartier soup, you could add in some diced veggies, but this simple leek soup recipe is just flavorful enough as it is, and doesn’t need any additional flavors.

This is a basic Irish-inspired recipe for a simple vegetarian and vegan potato and leek made with margarine and vegetable broth instead of cream or butter. If you like potato soup or leek soup, try this vegetarian version with both!”

Potato and Leek Soup

Ingredients:• 3 potatoes, diced
• water for boiling
• 3 leeks
• 1 cup mushrooms, sliced
• 2 tbsp margarine
• 1/2 cup vegetable broth
• salt and pepper to taste

Preparation:
Boil the potatoes in water until cooked, about 15 minutes. Drain well.
In a large skillet, sauté the leeks and mushrooms in the margarine until soft, about 6-8 minutes. Add the vegetable broth and the potatoes and cook for a few more minutes.
Transfer the mixture to a blender or food processor and blend until smooth.
