I have always loved Waldorf salads and especially when they are made with kale. This version though recently has really stolen my heart. Sweet and spicy with the addition of a jalapeno to the dressing, it makes a perfect meal or side dish. The sweet crispy apples, raisins, spicy nutty dressing, and dark greens make a delicious and unexpected combination.
Creamy Cauliflower Soup
Ingredients
- 1 bunch black kale
- 1/4 cup raisins
- 1/2 cup rinsed and drained black beans
- 2 sliced apples, divided
- 2 stalks diced celery
- 2 tbsp. olive oil
- 2 tbsp. red wine vinegar
- 1/4 cup walnuts
- Up to 1 jalapeno, seeded
- 1 + tbsp. water
- Salt and pepper to taste
Cooking Directions
- Add 1 apple, olive oil, vinegar, walnuts, the jalapeno, and water to a blender. Blend until smooth, adding water as needed. Season with salt and pepper. Add the jalapeno slowly and taste throughout to get the right spice level. This makes the dressing.
- Toss with remaining ingredients.
