Although summer is coming to a close, it is still pretty hot around here and popsicles make the perfect treat. These popsicles are made with coconut milk so they are completely vegan, paleo, and dairy free. I decided to use raspberries but any berry or fruit would work. Consider quickly blending harder fruits like pineapple or mango if you decide to use that. These would also be delicious dipped in some vegan chocolate before serving.
Coconut Raspberry Popsicles
Ingredients
- 10 oz. coconut milk
- 1.5 cups raspberries
- 2 tbsp. honey
- 2 tbsp. shredded coconut
- Optional: 2 tbsp. toasted shredded coconut
Cooking Directions
- Mash the raspberries slightly using a fork or spoon in hte bottom of a bowl. Mix in the coconut milk, honey, and shredded coconut.
- Pour into 6 popscile molds and freeze for at least 3 hours.
- If desired, toast 2 tbsp. of coconut shreds in a skillet for 2-4 minutes before serving. Press the popsicles into the coconut shreds.
