I have been dreaming about making this Toasted Coconut Popcorn from the first moment I saw it on Shutterbean. (Head over and check out Tracey’s blog, she is a bit of a genius and has plenty of vegan friendly stuff and beautiful photos to boot). Not only am I obsessed with popcorn in pretty much everyway, this adds my another love of mine – coconut. I added a touch of brown sugar to sweeten it up and also ended up drizzling a bit of chocolate over the second batch I made. It’s amazing and the perfect snack or dessert.
Toasted Brown Sugar Coconut Popcorn
Ingredients
- 1/4 cup coconut flakes
- 2 tbsp. coconut oil
- 2 tbsp. brown sugar
- 1/3 cup popcorn kernels
- Salt to taste
Cooking Directions
- Gently toast the coconut flakes over medium heat in a medium to large pot (big enough for your popcorn with a lid). It should take 2-4 minutes.
- Remove the coconut and then add the coconut butter over medium heat. Once melted, stir in the brown sugar and popcorn.
- Cover and shake the pot constantly. This keeps the sugar from burning. When the popping has slowed to once every 2 to 3 seconds, remove the pot from the heat and continue to shake for a few minutes until the popping stops.
- Pour into a large bowl and season with salt. Toss in toasted coconut.
